Position Overview
The Cook II supports culinary operations by preparing high-quality dishes in accordance with standardized recipes and hotel standards. This role works one or more kitchen stations, ensures food consistency, maintains cleanliness and safety, and assists with prep and production in a full-service hotel environment. The Cook II plays a key role in supporting senior cooks and ensuring smooth daily kitchen operations.
What You'll Do
Food Preparation & Cooking
- Prepare, cook, and present menu items according to hotel recipes and culinary standards.
- Work assigned stations such as pantry, grill, sauté, or hot line depending on business needs.
- Support daily set up by prepping vegetables, proteins, sauces, garnishes, and other ingredients.
- Maintain portion control, consistent flavor, and presentation for all dishes.
Production & Station Support
- Assist in batch cooking and banquet production when required.
- Ensure ingredients and supplies are stocked and organized before and during service.
- Communicate low-stock items or quality concerns to supervisors promptly.
- Support Cook I and culinary leadership by executing tasks efficiently and accurately.
Food Safety & Sanitation
- Follow proper food-handling, storage, and temperature-control procedures.
- Maintain a clean and sanitized workstation at all times.
- Adhere to health department guidelines, hotel safety policies, and sanitation standards.
- Label, date, and rotate products according to FIFO procedures.
Teamwork & Communication
- Work collaboratively with other cooks, servers, and culinary staff to ensure timely service.
- Communicate menu issues, timing challenges, or operational needs to supervisors.
- Assist with training and guiding Cook I or Prep Cook team members as needed.
- Support special events, banquets, room service, and outlet kitchens as required.
Equipment Use & Maintenance
- Safely operate kitchen equipment such as knives, ovens, fryers, grills, mixers, and slicers.
- Clean and maintain equipment and tools according to hotel guidelines.
- Report malfunctioning or damaged equipment immediately.
Additional Responsibilities
- Assist with opening, mid-shift, and closing duties including stocking, cleaning, and organization.
- Participate in inventory processes and support cost-control initiatives.
- Perform other duties as assigned to support culinary and hotel operations.
- Maintain reliable and consistent attendance as an essential function of the role.
What You'll Bring
Required Education & Experience
- High School Diploma or equivalent required.
Preferred Education & Experience
- Prior experience as a Cook II, Line Cook, or equivalent culinary role preferred.
- Full-service hotel, banquet, or high-volume restaurant experience preferred.
- Culinary training or formal kitchen coursework preferred.
- Experience working multiple kitchen stations preferred.
Required Skills and Abilities
- Solid culinary skills with the ability to work independently on assigned stations.
- Strong knife skills and knowledge of basic cooking techniques.
- Ability to follow recipes, portion guidelines, and plating standards.
- Ability to work efficiently in a fast-paced, high-volume kitchen environment.
- Strong attention to detail and commitment to food quality and consistency.
- Ability to stand for long periods, lift moderate weights, and perform repetitive motions.
- Strong communication and teamwork abilities.
