Position Overview
The Cook III is an experienced and skilled line cook responsible for preparing high-quality dishes in accordance with hotel recipes, production standards, and culinary expectations. This role requires advanced cooking knowledge, the ability to work multiple stations, leadership support for junior cooks, and a commitment to maintaining exceptional food quality in a full-service hotel environment.
What You'll Do
Food Preparation & Production
- Prepare, cook, and present menu items according to standardized recipes, quality standards, and presentation guidelines.
- Work multiple stations including sauté, grill, broiler, pantry, or hot line depending on business needs.
- Maintain consistency in flavor, portioning, and appearance across all dishes.
- Ensure readiness of mise en place for service periods, including chopping, slicing, marinating, and assembling ingredients.
Station Leadership & Culinary Execution
- Support junior cooks (Cook 1, Cook 2, Prep Cooks) by providing guidance, demonstrating techniques, and assisting with training.
- Coordinate timing of dishes with servers and culinary team to ensure timely service.
- Maintain awareness of ticket times and adjust pace as needed during high-volume operations.
- Communicate effectively with the Chef, Sous Chefs, and culinary leadership regarding food quality or operational issues.
Quality Control & Food Safety
- Ensure proper food handling, storage, and cooling techniques according to health department and hotel standards.
- Monitor food temperatures, sanitation levels, and product rotation (FIFO).
- Maintain clean, organized workstations throughout the shift.
- Immediately report any product quality concerns, shortages, or equipment problems.
Teamwork & Communication
- Collaborate closely with fellow cooks, servers, and culinary management to support smooth kitchen operations.
- Communicate product needs, substitutions, or timing challenges proactively.
- Support banquet, outlet, room service, and event production as needed.
Equipment Use & Care
- Safely operate kitchen equipment such as ovens, fryers, grills, knives, broilers, mixers, and more.
- Maintain cleanliness and functionality of equipment and report maintenance issues promptly.
- Follow hotel guidelines for safe operation and cleaning procedures.
Additional Responsibilities
- Support culinary leadership during menu changes, special events, and seasonal offerings.
- Perform opening, mid-shift, and closing duties including cleaning, labeling, stocking, and organization.
- Perform other duties as assigned to support culinary and hotel operations.
- Maintain reliable and consistent attendance as an essential function of the role.
What You'll Bring
Required Education & Experience
- High School Diploma or equivalent required.
Preferred Education & Experience
- Prior experience as a Cook II, Line Cook, or equivalent role preferred.
- Experience working in a full-service hotel, banquet kitchen, or high-volume operation preferred.
- Culinary school training or formal kitchen apprenticeship preferred.
- Experience with multiple cooking stations and advanced culinary techniques preferred.
Required Skills and Abilities
- Strong culinary skills with proficiency across multiple stations and cooking techniques.
- Ability to work efficiently in a fast-paced, high-volume kitchen environment.
- Strong knife skills and understanding of professional kitchen practices.
- Ability to follow recipes, portion controls, and presentation standards with accuracy.
- Excellent communication and teamwork abilities.
- Ability to stand for extended periods, lift moderate weights, and perform repetitive motions.
- Strong attention to detail, sanitation, and food safety procedures.
