About Dining at University of Detroit Mercy
At UDM, dining is more than nourishment—it’s a core part of the student, faculty, staff, and guest experience, rooted in inclusion, service, and culinary excellence. Some key features of the UDM dining program:
•Titan Dining Room (TDR): The primary “all-you-care-to?eat” venue at the Student Union (2nd Floor). It offers a rotating array of signature stations: hot entrées, scratch-made soups, fresh salad bar, pizza & pasta, made-to-order deli/grill items, etc. ?

•The Bookmark: Located in the McNichols Library, featuring Starbucks “We Proudly Serve”, plus Metz to-go items (wraps, soups, snacks, etc.). A place for study as well as a bite. ?
•The Pit Stop: A late-night option in Shiple Hall — 24/7 snacks and access for residents & employees during Residence Life hours. ?
•Corktown Café (Dental Clinic Campus): Offers hot entrees, grill items, salads, to-go, desserts etc. ?
•Catering & Conference Services: UDM / Metz offers full catering—breakfast, lunch, upscale luncheons or dinners, event support for students, faculty, external guests, etc. ?
•Dietary Diversity & Food Preferences: Offerings include Halal-certified meat options (chicken except tenders, pepperoni, ground beef), vegetarian, gluten-friendly, etc. ?

Position Overview
Reporting to the General Manager, the Assistant General Manager (AGM) of Dining Services will play a key leadership role in ensuring that all UDM dining operations deliver exceptional food, hospitality, safety, and financial performance. The AGM will supervise multiple operations (residential/all-you-can-eat, retail, national brands like Subway & Starbucks, late-night venues, café/”grab-and-go” locations, and catering & conference services) and will partner closely with UDM campus leadership to reinforce the institution’s values of inclusivity, community service, and student success.

Key Responsibilities
•Assist in managing daily operations of all dining venues: Titan Dining Room, The Loft (Subway, J. Clark’s Grille, Up for Grabs), The Bookmark (Starbucks + wrap/soup/snack service), The Pit Stop, Corktown Café, Riverfront Law campus café, etc.
•Oversee and ensure compliance with food safety standards (HACCP, FDA codes, etc.), as well as Metz’s own operational standards.
•Lead staff hiring, training, supervision; cultivate a culture of hospitality, inclusion, respect, and continuous improvement.
•Collaborate with campus stakeholders to plan and support dining for conferences, events, external guests.
•Manage financial aspects: food & labor cost controls, inventory, budgeting, procurement; align with Metz’s financial systems.
•Ensure excellent guest experience: quality of food, speed, cleanliness, atmosphere, customer satisfaction.
•Support dietary inclusion (vegetarian, halal, gluten-friendly, etc.), allergen awareness, sustainability practices, and wellness initiatives.
•Acts as a hands-on leader during peak service times; provide leadership presence across venues.

Preferences
•Minimum of 3 years leadership experience in a multi-venue foodservice / campus dining environment, or equivalent in hospitality.
•Experience with retail/national brand operations (Subway, Starbucks) is strongly preferred.
•Strong knowledge of culinary operations, food safety, sanitation, and dietary accommodations.
•Excellent managerial, communication, and customer service skills. Ability to motivate, coach, and manage a diverse team.
•Financial acumen: budgeting, cost control, reporting, inventory management.

Metz Culinary Management is growing and we have an exciting opportunity for an experienced Assistant Manager in a busy commercial kitchen and operations setting. We are seeking an individual with high energy, a polished and professional identity and winning attitude FOH and BOH operations. Experience desired in a Contract Dining Food Service setting such as Hospital, School, College, Senior Living or Corporate Dining accounts. Culinary background is a strong plus!
The Manager and Supervisor shares an overall responsibility of food service. He/she institutes company cycle menus and recipes; plans and oversees operations, purchasing, employee personnel programs, scheduling, bookkeeping, and customer and client relations; directs through supervision food preparation service and sanitation; and is accountable for the total operation results.
