Lead Cook
Basic Function:
The Lead Cook assists in directing production staff, in the areas of hot and cold food, in the daily routine functions of the Dining & Nutrition Department. Ensures certain policies and procedures are being followed, standardizes recipe compliance, and cooking techniques and food safety procedures are being met in order to serve our patients, visitors and staff at the facilities of Ellis Hospital. Handles and prepares foods in accordance with safety and sanitary regulations.
Requirements:
High School diploma or equivalent required. Three (3) years' of restaurant or institution food preparation experience or vocational training for food preparation required. Serve Safe Certification preferred (must be able to obtain Certification within six (6) months of hire).
Responsibilities:
- Assists in directing production staff, in the areas of hot and cold food, in the daily routine functions of the Dining & Nutrition Department.
- Responsibilities may include direct supervision of department staff as needed or scheduled.
- Ensures certain policies and procedures are being followed, standardizes recipe compliance, and cooking techniques and food safety procedures are being met in order to serve our patients, visitors and staff at the facilities of Ellis Hospital.
- Reviews menus, tally sheets and prep sheets to determine type and quantities of foods to prepare as to avoid food waste.
- Plan cooking schedules so foods are ready to be served at specific times and set up for steam tables.
- Follows recipes continuously using weights and/or measures with good portion and ingredient control. Monitor portion sizes served.
- Follow recipe work methods using proper time and temperature control, holding foods at the proper temperature and meeting required serving temperatures. Follow proper re-heating and cooling methods.
- Prepare food in a timely manner, meeting all serving time periods and demands. Prepare food in small batch cooking schedules throughout the meal period and with steam table temperatures monitored.
- Prevents waste of product by decreasing batches and recovering over production utilizing proper food cooling and storage techniques.
- Records quantities of foods produced including over and under amounts.
- Handle and prepare all foods in accordance with safety and sanitary regulations.
- Properly store, label and date all stored foods and discard out of date food items.
- Use and keep work areas and equipment/utensils clean, sanitized and in good operating function so as to provide a quality product and optimal safety. Sanitizing solutions are present in the work area and cleaning rags are stores in them.
- Ensures safety practices are followed and performs inspections and safety audits, provides ongoing coaching and input.
- Document and completed QA logs and perform corrective action as needed.
- Document daily on inspection forms and places deficiencies into a PDSA.
- Assists with kitchen rounds; ensures safety with food and physical work environments meeting sanitation and food standards for regulatory compliance.
- Report food preparation, cross contamination, and equipment issues to the manager.
- Recommends new products and procedures.
- Collaborates with other departments throughout the organization.
- Provide on the job training to new employees and provides performance feedback.
- Complete required training as assigned.
- Adhere to patient privacy policies and procedures, maintain confidentiality.
- Additional duties as assigned.

Pay rate: $20.21 - $29.31/hr
Compensation details: 20.21-29.31 Hourly Wage
