Position Overview
The Pastry Cook assists in preparing and baking pastries, desserts, and baked goods in accordance with established recipes and kitchen standards. This role supports the pastry team in daily production, ensuring consistency, quality, and presentation across all outlets, banquets, and special events.
What You'll Do
Pastry Production & Preparation
- Prepare pastries, cakes, cookies, and specialty baked goods following standardized recipes.
- Measure, mix, and bake ingredients using proper techniques to achieve desired taste, texture, and appearance.
- Ensure consistent quality, portioning, and presentation of all baked items.
- Assist with decorating cakes, pastries, and specialty desserts for various outlets and events.
- Produce baked goods for hotel restaurants, room service, banquets, buffets, and special functions.
- Prepare and plate desserts for banquet events according to Banquet Event Orders (BEOs).
- Ensure timely production for breakfast, lunch, dinner, and late-night service needs.
- Support pastry and culinary teams during high-volume periods and seasonal events.
Quality, Sanitation & Food Safety
- Maintain a clean, organized, and sanitized work environment, including all baking equipment and storage areas.
- Follow proper labeling, dating, and storage procedures using FIFO standards.
- Adhere to all food safety guidelines, sanitation procedures, and hotel cleanliness standards.
- Monitor equipment functionality and report maintenance needs promptly.
Creativity & Menu Support
- Contribute ideas for new baked goods, seasonal menus, and specialty desserts.
- Assist in testing and refining recipes to ensure consistency and quality.
- Support innovative pastry displays and presentation for banquets and events.
Team Collaboration & Communication
- Work closely with the Pastry Lead Cook, Executive Chef, Sous Chefs, and culinary team to coordinate production.
- Communicate ingredient shortages, production delays, or equipment concerns in a timely manner.
- Assist in training junior team members on baking techniques and kitchen standards.
What You'll Bring
Required Education & Experience
- High School Diploma or equivalent required.
Preferred Education & Experience
- Previous pastry or baking experience preferred.
- Experience in a full-service hotel or commercial kitchen preferred.
- Formal pastry training preferred.
- Experience with banquet or high-volume production preferred.
Required Skills and Abilities
- Strong baking and pastry skills, including measuring, mixing, shaping, and decorating.
- Attention to detail with a focus on quality and presentation.
- Ability to follow recipes, production lists, and schedules accurately.
- Knowledge of food safety standards and proper food handling procedures.
- Ability to multitask and perform efficiently in a fast-paced kitchen environment.
- Strong teamwork and communication skills.
- Ability to stand for extended periods and lift or carry items as needed.
- Creativity and passion for baking and dessert presentation.
- Professional attitude and strong work ethic.
- Flexibility to work early mornings, weekends, and holidays based on business needs.
Licenses or Certificates
- Food Safe Serve or Texas Food Handler Certification required.
