POSITION SUMMARY
The Assistant GM supports the day-to-day operation of Still Austin’s hospitality business while leading the strategy, execution, and performance of all beverage programs across the SAQ. This role serves as a key operational leader, balancing broad hospitality management responsibilities with direct ownership of beverage quality, profitability, training, and innovation.
This role helps drive performance across daily service, events, staffing, inventory, compliance, and guest experience, while also ensuring beverage offerings are curated, on-brand, operationally sound, and financially successful. The Assistant GM partners closely with the General Manager and broader hospitality leadership team to build an intentional, high-performing culture and a distinctive beverage program that strengthens the Still Austin brand.

JOB RESPONSIBILITIES
Hospitality Operations Leadership
- Support daily front-of-house operations to ensure service standards, team readiness, and a high-quality guest experience.
- Manage shift execution, including opening and closing responsibilities, floor coverage, deployment, and service flow.
- Coach, train, and support team members to improve performance, consistency, hospitality, and operational discipline.
- Help maintain a culture of inclusivity, accountability, engagement, and excellence across the hospitality team.
- Assist with scheduling and labor coverage to align staffing with business needs.
- Support inventory, ordering, cost control, and broader operational discipline across hospitality functions.
- Ensure compliance with labor, safety, alcohol service, sanitation, and health regulations.
- Support guest recovery efforts with professionalism, urgency, and sound judgment.
- Monitor cleanliness, organization, and overall condition of guest-facing and back-of-house hospitality spaces.
- Coordinate facility repair and maintenance requests and follow through to resolution as needed.
- Communicate clearly and consistently with leadership and team members regarding priorities, issues, and operational updates.
- Pivot effectively between traditional service operations and events service, supporting the needs of both environments.
Beverage Program Leadership
- Design, develop, and maintain all beverage menus, including cocktails, spirits, beer, wine, non-alcoholic, and café offerings.
- Ensure intentional integration of Still Austin whiskey into cocktails, flights, tastings, and beverage storytelling.
- Lead seasonal menu development, limited-time offerings, and beverage innovation initiatives.
- Establish and maintain beverage SOPs, including prep standards, recipes, batching, service standards, glassware, garnishes, and presentation.
- Ensure beverage consistency across shifts, service spaces, and events.
- Own beverage financial performance, including COGS, pricing strategy, margin optimization, waste reduction, and inventory controls.
- Develop and manage beverage inventory systems, par levels, ordering processes, and variance controls.
- Lead beverage training programs for bartenders, barbacks, café staff, and beverage leads covering product knowledge, technique, and hospitality execution.
- Coach and develop bar leadership and high-potential talent.
- Support hiring, onboarding, performance feedback, and team development for beverage-related roles.
- Partner with Events and Marketing teams to create beverage-forward experiences for private events, brand activations, releases, tastings, and community programming.
- Support off-site and high-visibility activations as needed.
- Partner with Compliance leadership to ensure all beverage operations meet TABC requirements and internal standards, while modeling responsible alcohol service practices.
ESSENTIAL DUTIES
- Deliver a consistent, memorable, and brand-aligned guest experience across hospitality operations.
- Support daily operational execution across service, staffing, inventory, facilities, compliance, and hospitality standards.
- Lead and evolve the Still Austin beverage program with a strong focus on quality, profitability, creativity, and execution.
- Help lead and develop team members through active floor leadership, coaching, training, and accountability.
- Maintain clean, organized, safe, and well-functioning hospitality spaces, bar systems, equipment, and tools.
- Ensure adherence to company policies and applicable labor, alcohol, safety, and health regulations.
- Serve as a reliable operational partner to the General Manager and hospitality leadership team.
QUALIFICATIONS
- Proven experience in an Assistant General Manager, Beverage Manager, Bar Manager, or comparable hospitality leadership role in a high-volume environment.
- Strong working knowledge of bar, restaurant, and hospitality operations.
- Demonstrated experience leading beverage programs in craft cocktail, spirits, or hospitality-driven environments.
- Advanced beverage knowledge, including cocktail development, batching, menu engineering, low/no offerings, and beverage presentation preferred.
- Experience managing beverage financials, including COGS, inventory, pricing, and margin performance.
- Strong people leadership skills, including hiring, coaching, training, and performance management.
- Demonstrated ability to coach team members, solve problems in real time, and support a strong guest experience.
- Comfortable balancing operational responsibilities across daily service, events, beverage execution, inventory, scheduling, and facilities needs.
- Current TABC certification and Texas Food Handler certification required, or ability to obtain.
- Ability to work mornings, evenings, weekends, holidays, and special events as business needs require.
- Positive attitude, professionalism, and passion for hospitality, beverage, and guest experience.
PHYSICAL REQUIREMENTS
This role requires the ability to:
- Stand and walk for extended periods throughout a shift.
- Lift and carry up to 50 pounds on an occasional basis.
- Work in indoor and outdoor environments with varying temperatures and conditions.
- Bend, stoop, reach overhead, and occasionally climb stairs as needed.
- Maintain focus, urgency, and professionalism while managing multiple operational priorities in a busy hospitality environment.
